Simple dinner: corncakes


A quick quiz for you today (as I am fooling myself that someone visits this blog and reads my ramblings - don't be shy, say hi!)

The author of this blog:

a) cooks poncy/fancy food
b) likes simple, tasty grub
c) uses obscure ingredients that no one ever heard of

Well, that was easy, eh?
When I'm tired after work, the train is delayed (again!) and I'm ravenously hungry (always!) I'm all about simplicity. That's where corncakes come in. Try them when you have one of them 'can't be bothered to cook' days.

To make enough for two you'll need:

1 tin of sweetcorn (big or small - depending how corny you like your cakes)
150g self raising flour
2 eggs
half a bunch of coriander
half a bunch of parsley
1 tsp ground cumin
1tsp cajun seasoning
1 tsp baking powder
150ml milk
pinch of salt and freshly ground pepper
oil, for frying

(Now let's pretend that milk, beans and avocado are in the picture above. I'm getting older and forgetful, ok? Thanks, I knew you'd understand) 

 Drain the corn and blitz in a food processor with the rest of ingredients. 

 Ok, it ain't looking pretty, but we're getting there.
Heat some oil in a pan and pour 2-3 tablespoons of the mix to form little pancakes (I have two little frying pans I use to make them a bit bigger) - fry for about 2-3 mins on each side on medium heat.

Serve with parma ham, avocado, steamed green beans and tomatoes. Or chopped cucumber, tomatoes and rocket. Hey, that took only 15 minutes and you've got yourself a tasty and healthy dinner. Give yourself a pat on the back.
